Poor old Jambalya

Here is my latest meal...





I was going to cook and have my Ja friends over Monday night. It didn’t work out for them so I still had the fixing for Jambalaya. Wednesday afternoon I decided to make it. It was so good but I was unable to share it, YET. Here are the ingredients.

2 chicken breast-grilled and chunked
3 apple brats- grilled and sliced
1 lb shrimp- leaving the tail
3 ribs celery-diced
6 little carrots-diced
1 onion-diced
1 green pepper-diced
4 cloves of garlic-minced
2 bay leaves
Thyme
Cajun seasoning
1 can rotele
1 can stewed tomatoes
2 boxes of Zataran jambalaya-use portions of water on box.

I fixed the all the meat except the shrimp, that goes in last. Add to water .. Chop and cook veggies till translucent. Add tomatoes Add all to pot and cook for a while. Then add rice and simmer for 25 minutes. Just before it’s done add your fresh shrimp. Real important not to have that shrimp in there for the full simmer.. You will have over done shrimp and it’s nasty.

This is silly but I thought of that old song. “poor ole jambalaya he never got a kiss. Poor ole jambalaya he don’t know what he miss. Is it any wonder……ok it’s not jambalaya but it sounded good last night when I was eating it!

kawliga, my dad used to sing that all the time

my friend's grandchild sings "my jammies, i hope u like my jammies too'....so cute...

i like the jambalaya with pasta noodles too...real spiced up...u can cook it for me anytime

yummy !!!

my daughter was here last weekend and made up about 25 bags of jambayla...YESSSSSSS !!!!!
